Four extremely light flourless cocoa sponge cakes with raspberry alternate with our mousse made of French dark chocolate – and to make the raspberry’s flavor even more intense – I added a layer of raspberry chutney. The appearance of the cake is very elegant thanks to the sparkling mirror glazing.
